I love experimenting with foods and mixing flavours, it comes down to part luck, part mad scientist and the fun of the chase. How else would we get some of the greatest dishes that are in the world today? Who knows maybe this delightful combo will become
starallon's dish of fame to give to the world one day.
This is not a photoshopped picture, I actually made these and they are actually pretty tasty! That is indeed Bacon and white chocolate in a cookie.
I occasionally like to lurk, and sometimes speak, when genesisw does her live streaming of art. During one of my speaking times the channel conversation went into bacon (Which seems to be regular there, I find the stream very amusing! Between good music, cute rats, playful banter, and a fun talking group it's a very nice live stream to watch) Bacon, and White chocolate had been brought up and myself and a fellow named Leon ( minimumtalent ) were talking in it about how Bacon and White chocolate make everything better... and I said I need to make Bacon and White chocolate cookies.
So... I did.
And, they are surprisingly good!
A nice mix of salty, sweet, and savory. They really work at your tastebuds.
I'll post my initial recipe here to begin with BUT I plan to refine it more. Next time I'm going to switch out some of the butter for some shortening and I think that'll help with the cookies a bit.
Anyway onto the silliness that is Bacon and White Chocolate cookies... Oh so good though!

White Chocolate and Bacon Cookies
makes about 24 1 oz scoop cookies.
4 oz butter softened
1 Tbsp chilled Bacon grease
Mix together better and Bacon grease on medium speed in a mixer for a minute or two till combined. Don't mix to much or the bacon fat may become liquid again in the bowl.
1 Cup (6.2 oz) Brown sugar
1 pinch of salt
Cream together the Fat and brown sugar till light in color. (Next time I make this I may try Dark Brown sugar, the cookies came out a little pale.. Or maybe add some molasses or Maple syrup.)
2 Eggs (3 oz)
1 tsp Vanilla extract (Though I bet maple extract would pair awesome with this!)
Combine together eggs with sugar mixture until smooth.
2 cups all purpose flour (About 8 oz.)
Slowly add in flour until combined.
3 crisp pieces of bacon, crumbled,
1 cup white chocolate chips.
Fold in the Bacon and white chocolate chips.
Spoon out each cookie and top with a piece of bacon (Optionally white chocolate chips as well.)
Bake at 350 degrees for about ten minutes until the bottoms are lightly browned. Serve warm or let cool.

Storage... here I'm a bit mixed. Part of me says "Well, there is bacon, they should be refrigerated!" BUT, the other part of me is "If you refrigerate baked goods they go stale very fast!" So, pending that... the freezer definitely works and baked goods freeze very well...
But I'm just keeping them in an air tight zip loc for now. I'll be testing periodically to see if it has any ill effects. I see them as being shelf stable... Well, most of the moisture has been driven out in baking, The bacon itself is both Cured and Smoked, which are both preservative methods, and it's been cooked crisp so moisture isn't an issue either. A lot of the aspects one needs for a good bacterial environment arn't really present, not to mention sugar is hydroscopic (Meaning it absorbs moisture well, and thus keeps it from bacteria) and you've got salt which works well against bacteria and I don't see why they wouldn't be.
Up to you how you keep it. I might be updating this with a "Keep these for storage in your freezer or eat within a day" In a couple days though!
