Another marvelous muffin delight from the kitchens of  onelonelyfoxmetall

BANANA BREAD MUFFINS OR LOAF

5 tablespoons butter
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg
2 egg whites
1 teaspoon vanilla
1 to 1-1/2 teaspoons cinnamon
4 or 5 mashed ripe bananas
1-3/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup milk
* 2/3 cup walnuts, chopped finely if wanted *

PREP

In a bowl - combine butter and sugar until well beaten. Add egg and egg whites, vanilla, beat until well beaten. Add bananas, mix well. Combine flour mixture to butter mixture alternately with milk. Add nuts if wanted Mix well. Pour batter into greased loaf pan (9x5x3) or fill greased muffin tins .Bake at 350°F. for Loaf pan - 1 hour and 15 minutes or muffins - 15 to 20 minutes.

Bake until browned . check with a toothpick inserted in the center till it comes out clean. Cool bread in pan for 10 minutes.
