Cowboy caviar
Ingredients:
2 red and green bell peppers
2 tomatos
1 jar of roasted red bell peppers drained and rinsed
2 cans of six mix beans drained and rinsed
2 cans of southwest style corn medley drained and rinsed
1 pack of cilantro
Salt and black pepper to taste
smoked paprika
One bottle of sun-dried tomato dressing
2 limes
Method:
Cut up peppers tomatoes and roasted peppers in to small peaces and add to a large bowl. Next open the cans of beans and corn and add to the bowl. Next cut up the cilantro and add it to the bowl. Next zest and juice the limes in to the bowl and add smoked paprika, salt and pepper to taste. Then empty the bottle of sun-dried tomato dressing in to the bowl a mix then cover and refrigerate for 2 hours then get a bag of scoop chips and DEVOUR!
