My Father's Birthday was last Saturday and my first day off since then was today so I made him a multi-course meal. I tried out some different things and well I know he loves blueberries so I made him a simple blueberry cobbler for desert. Well I made four mini ones, one for each of us at the table. Served bubbly hot! Skipped ice cream on them, though that would have been perfect to go with the crazy hot goodness that is cobbler.
Some people like a very cakey cobbler. Myself I like a sort of streusel style topping to my cobblers.

A simple classic desert that I like to do in individual servings so it comes out nice, hot, and perfect for each guest.
Blueberries are a sweet and slightly tart treat that are loaded with a lot of good nutrition for you too, yet still tasty. Given they are often in season for late spring and early summer it’s a great time to make a nice cobbler. Excellent served with a scoop of vanilla ice cream, or just enjoy it alone.
Setup:
1 Pint of Blueberries, rinsed
½ stick of butter
½ cup Brown Sugar
½ cup flour
1 Tbsp Pumpkin pie spice (Cinnamon, Cloves, and Nutmeg)
Mix together Sugar, Flour, and Spices. Cut butter into small pieces and mix together with the flour mixture until butter is worked in and a crumbly sort of dough is formed.
Baking:
Pre-heat oven to 350 degrees.
Put a quarter of a pint of blueberries in each serving dish (Make sure they are oven safe.)
Mix in 1 Tsp of spices and 2 tsp of brown sugar with each set of blueberries.
Take some of the flour and butter mixture and add to the top of each dish.
Bake for twenty to twenty-five minutes until bubbly, hot, and the top melted and nice and brown.
Enjoy your delicious summer berry treat! This works great with mixed berries too like blackberries, raspberries, and even strawberries too.
