This here is the desert course from the three course Mother's day meal I did for the most recent Mother's day. I admit, I love my mom and always like to treat her special, and cooking is one of the nice ways I can do that.
To go with that, here is a nice recipe for a delish no bake chocolate Peanut Butter Pie!
Oh, I garnished this on the side with a fresh baked Peanut Butter cookie and topped with Cool-whip.

Mother’s Day, something I always try to go all out for, and one of the favorite things for that is desert. For a past Mother’s Day I made a delicious Chocolate Peanut Butter Pie, and I put it in a large peanut butter cookie as the shell! Topped off with Ganache.
Here I’ll go over the pie filling and you can put it into whatever you would like, graham crusts work great.
Setup:
1 8oz block cream cheese, softened
1 cup peanut butter
1 cup semi-sweet chocolate chips
½ cup milk
2 tbsp cocoa powder
1 8oz container Cool-whip topping, thawed.
Mix in a mixer with the paddle the Cream cheese and peanut butter until well combined and gained in volume slightly, about five to six minutes. Scrape down bowl.
Melt the chocolate chips with the milk (I use a microwave doing Fourty five seconds to start, stirring, then doing thirty second hits until nicely melted).
Beat the cocoa powder and melted chocolate chips into the cream cheese mixer. Beat for several minutes until well combined.
Remove the bowl from the mixer and fold in the cool-whip slowly. You might need to directly mix some in first, then slowly fold the remainder in, in thirds, by using a large spatula to go around the edge of the bowl and bring it back towards the center, creating a folding sort of motion. Try not to beat as you’ll cause some loss of air and lightness from the mix.
Put into a pie shell (Or a big baked cookie), top with your favorite chocolate, or peanuts, and chill in the fridge for at least three hours.
Serve and enjoy! It’s fairly rich so small pieces work just fine for a great treat.

To add a simple Ganache like I used on the top of this pie, mix together half a cup of Milk or Half and half (Or Heavy Cream if you really want it rich) and a Cup of chocolate chips. Melt on a double boiler or put it first in the microwave for 45 seconds, then do twenty to thirty second intervals, stirring until mostly melted. Then stir the last bits till they melt.
Pour melted Ganache over top of the pie as a garnish.

Philidelphia brand for the cream cheese. I've tried store brands and I do feel there is a decent different.
Cool-whip brand for the non-dairy topping.
Beyond that, well anything else can go for this. I personally do like Ghiradelli chocolate chips and like one of there darker chips too, but that's personal taste.

They get mixed in with the cream cheese and peanut butter, After you've built some volume to them first. Mix the Cream cheese and peanut butter first, to build volume, then add in the cocoa powder and melted chocolate whipping that in for a bit. I find the lighter mixture takes the chocolate more easily by adding it after some of the mixing, if you add it in the beginning sometimes it doesn't seem to incorporate as well.
Now in this picture I had topped the whole thing with a ganache, which you could basically do about the same way actually, and pour over top when done and chill.

It is a non-dairy whipped topping. Usually found in the frozen department, here in America at least.
