Recipe for all you culinary furs out there!
Apple Pie Cupcakes - 156cal each/210cal w/meringue
Crust
1cup flour
1/2tsp salt
1/2cup shortening
1/4cup water (may or may not be used)
-Mix flour and salt together in bowl.
-Add shortening ¼ cup at a time and mix.
-If mix forms a dough ball, you do not need the water. If mix does NOT form a dough ball, add the water slowly until it does.
-Refrigerate for at least 4 hours or overnight.
-Roll out dough to a thin layer and use a bowl or large glass to cut circles in the dough.
Line each sections in a cupcake pan with dough just like you would do with a pie crust.
Should make approximately 10 ‘pies’.
Filling
1 large apple, cubed in small pieces
dash cinnamon
1/2c milk
1tbsp brown sugar
1/2 tbsp butter
splash vanilla
splash lemon juice
1c cold water
-Preheat oven to 425 degrees.
-Chop apples into small cubes. Combine lemon juice and cold water in a bowl and place the apple pieces in the mixture to keep them from browning. Add a dash of cinnamon to this if desired.
-Combine milk, sugar, butter, vanilla and cinnamon in sauce pan and bring to a rapid boil, stirring constantly.
-Drain the apples and add equal amounts to each pie. Spoon the sauce over the top.
-Place in the oven for 10 minutes, then lower heat to 350 for an additional 30 minutes.
Meringue (optional):
3 egg whites
splash vanilla
3tbsp sugar
splash lemon juice
-Add egg whites to mixer with vanilla and lemon juice and begin mixing.
-Once mixture begins to become foamy, start adding sugar 1 tbsp at a time. Taste after each addition and stop at desired sweetness.
-Mix meringue to desired consistency and then top you ‘cupcake’ with the ‘frosting’. 1tbsp is a serving-size!
