These are sugar-free coconut strawberry lemonade cup cakes (except for the butterfly decoration and sprinkles). They are made with splenda and unbleached flour... and lots of butter
Trust me, you wouldn't miss the sugar...

LOL Thank You! Here is what I put into it: 3 sticks of butter; 2 cups of splenda; 6 large eggs; 1.5 teas vanilla; 2 teas coconut flavor; 3 cups whole wheat flour; 1 tea baking powder; 1/2 teas baking soda; 1/2 teas salt; 1 cup milk; 1/2 cup dried coconut; yellow food coloring-
Cream your wet ingredients together in mixer, and in a separate bowl mix all of your dry ingredients together. Slowly add in your dry ingredients while the mixer is going until it is well incorporated and fluffy. Add shredded coconut and food dye to make the batter extra yellow for Fluttershy! Take one small pack of no sugar added frozen strawberries, thaw and pulse in a blender (not too much so you still have some chunks). Put a spoon full of batter into you tray lined with paper cups, then put a spoon full of blended strawberries on top, then put another spoon full of batter on top of that (you can swirl if you want to make it pretty. The strawberries keep the cup cake super moist). Bake for 35 minutes at 325 degrees. Let cool.
Use some sugar free icing (I just bought this in the store), and mix well with a table spoon of lemon flavoring until the icing is easy to spread. Remove a third of the icing and set aside. Add a couple drops of yellow food dye to the larger amount and spread on cooled cup cakes. Take a third of the smaller amount left on the side and color that green, and the rest of it pink. Place icing into a ziplock bag, snip tip, and decorate!
If "Friendship is Magic" this is definitely the wizards trick to gaining them :) I took this to a local comic convention and the artists loved it! They didn't miss the sugar at all and it made anyone with diabetes SUPER HAPPY to get something sweet but without guilt :-D
