I know a good way to described this: The dragon is thinking "oh crap, I'm screwed."

Dragon use to eat demons? That is new to me. I wonder what makes a dragon stronger then a demon... I must read these stories now!

Dragons were mostly only evil in European folklore. They weren't so much "magical" as they were a physical manifestation of one's greatest challenge, hence all the old European stories of knights fighting dragons. Not sure where the princess and gold thing came about other than maybe a symbol of man defeating greed and lust (Manifested as a dragon) maybe? Other countries had stories of them being forces of nature, or a balanced opposition to demons or other crazy monsters, etc :D Having trouble recalling any specific titles but I could probably do some digging.

Might have to fight the big friggin demon snake for it. Seems like he has other plans far as I can tell

And now the dragon learns that the demon-snake didn't get to be so massive by eating veggies. Everybody wins!
