Salad ingredients
Cabbage: Half of a medium head
2 medium carrots
Dressing ingredients
1 cup Miracle Whip (“salad dressing”)
1 tablespoon mayonnaise
2 tablespoons cider vinegar
1/4 teaspoon celery salt
1/4 teaspoon mustard powder
Dash black pepper
Dash onion powder
Core the half head of cabbage. Cut into four wedges. Shred slice the wedges or use the slicer on a food processor. You can get a finer shred with a good, sharp knife. Peel the carrots. Shred with either a manual box shredder or a food processor with a shredding disk. Personally, I hand-shred the cabbage and food processor shred the carrots.
Combine the dressing ingredients and mix well. Mix into the cabbage/carrots. Let sit in the refrigerator at least a couple of hours.
The above will make enough to fill a half-gallon size bowl. Easy to scale-up/down as you need.
Being a frugal squirrel, I usually use store brand “salad dressing” which tends to be slightly thinner than brand name Miracle Whip, but that seems to work better for this.
Not quite my mother’s recipe, but she never shared her dressing recipe. This one I found on the Internet over 20 years ago and it works well for me.
