Haven't uploaded anything in like a month, haven't drawn anything for longer.
The past [TIME SINCE LAST UPLOAD] has been more about refining existing recipes than exploring new ones.
Also getting really into Fried Rice. Gotta invest in a Rice Cooker at some point, and maybe a Mortar & Pestle.
Recipe (makes 4-5 portions)
450g Mushrooms, cleaned and sliced
1 Medium Onion, finely diced
3-4 Garlic Cloves, crushed and minced
800ml Weak Vegetable Stock
4tbsp Double Cream, plus extra for garnishing
4tbsp Oil (used Rapeseed)
Some Mixed Herbs or Chopped Parsley for garnishing
1. Put a large frying pan on medium-high heat and add three tablespoons of Oil. On a separate hob, put a large saucepan on low heat and add the last tablespoon of Oil to keep it warm.
2. Add the Mushrooms and Onions to the frying pan and cook for up to fifteen minutes, stirring constantly and making sure to give everything some time on the bottom. During this time a lot of moisture is going to leave the Mushrooms, so don't worry if your pan seems too full, it won't be for long.
3. Once almost all the moisture has evaporated, make a small space in the middle of the pan, add the Garlic and cook it out for the remaining couple of minutes.
4. Transfer the Mushrooms, Onions and Garlic to the large saucepan and add about quarter of the Vegetable Stock, mixing well before adding the rest and bringing it to a boil. Bring the broth back down to a low simmer and let it cook for 20-30 minutes.
5. Remove the broth from the heat and let it cool for ten minutes before blending. Blend until smooth, add Salt and Pepper to taste and stir in four tablespoons of Double Cream to finish.
(5.5. For the sake of keeping the recipe Vegan friendly, I would substitute Double Cream for Coconut Cream instead.)
6. Garnish with a drizzle of Double Cream and a pinch of chopped Parsley/Herbs to serve.
Sidenote - Usually I'd sprinkle some salt over the Mushrooms to draw out more moisture when I'm cooking them. This time I skipped out because I didn't want to accidentally oversalt my soup, but it's a good method in almost every other situation.
