Depends which way you are trying to gain! If you're looking for softer, slower and healthier gains, High fat and high protein is the way to go, and that doesn't exclude dairy of the mix because it's basically fat and protein at the same time with a little lactose! It's true that carbs give faster gains, but it's harder on the body in the long run and depending on the metabolism (notably if it's too fast), carbs actually don't help much unless you gorge on them a lot, because they get processed too fast.
Yes, if you don't give your body carbs at all. But ketosis only happens if there is no carbs to be used by the body during a certain period a time. But if you still eat just a moderate amount of carbs your body won't go in ketosis. so you get the benefits of a higher amount of nutrients that are much more slow to process and in the end, much easier for your system, atop of more aminoacids, and more proteins for building up all the muscles needed to haul all that newfound pudge around, without the possibility of your body to switch to ketosis mode and start shedding pounds. That's already a much better approach, but sumo wrestler also combine their eating habits with very strict fasting periods that make their gains work the way the do, which is nearly impossible to achieve in a life that doesn't revolve around it. And yes, maximizing subcutaneous is always the way to go in long-term gaining :3
