Well, I recall Cheerilee explaining it symbolizes mainly your special talent that makes you unique. So, it's not like Derpy has to go work in a bubble factory instead of delivering mail just because her cutie mark is bubbles. I mean, Rarity's talent is finding gems, but she's not a miner. Pinkie's talent is throwing parties, but she works in a bakery, which, while it's a related occupation, is not exactly the same thing.
