Our first day in Japan. Basically marinated pork tenderloin on a stick, and mustard pickled eggplant, with a side of Horenso Goma-ae; spinach in sesame dressing. Chef was concerned that I loaded the skewers on too much, that I wouldn't cook them all the way through. But with a little love, they were the best he had in class.
