Its free pouring, you basically have the espresso sitting in the bottom of the mug, and then angle it and pour the textured milk into the espresso, and as you pull back across the mouth of the cup you shake the pitcher lip so you make a jagged line back, and then when you reach the end, you pull the pour back through which is basically the stem, and you split the lines into leaves.
