It´s the "traditional" *cough-cough* outdated *cough-cough* way of transfering magic from one person to another.
The modern way is to filter out the magic out of the blood of someone already infected and directly ram it into the new apprentices carotid artery with a sterile needle.
But since UC doesn´t have the money or connections to get the necessary equipment, wich is said to can only be used once, he has to do it the old fashioned way.
