One Rabbit
A sprinkling of olive oil
Generous coat of rosemary, thyme, oregano and basil
Some salt and pepper
Potatoes and carrots (what's a rabbit without carrots?)
Put on a low wire rack in a roasting pan, lid on.
Roasted at 425°F for 1 hour and 10 minutes.
DELICIOUS.
First time I have ever cooked/tried rabbit. It was good! I wasn't aware if rabbit had any outstanding taste so I didn't want to cook it in a sauce that would cover up the rabbit itself. All in all, I think it was a good decision. It kind of gave the meal a old-world kind of feel.
I apologize for the quality of the pictures, I suck with cameras. Also, there is a chunk missing out of the rabbit's leg because my dad got to it before I could get my camera! XD

I've had deer jerky, deer chili, deer stew and pan friend deer pieces. Being raised in the south where deer hunting is the norm makes it easy to get.
From what I've seen, rabbit isn't to expensive, it's finding a place that sells it thats the problem. Maybe if theres a butcher near by you can find some there.

Yea. I'm right where the Mohawk and Hudson river meet. All the nasty PCBs and crap. DX
My great grand father came here from France, and as a kid, he would catch fish from these rivers for dinner. And it was ok. But now, some areas aren't even good for swimming any more. Its tragic what can happen is so little years. >;

Alright. . . I feel bad enough when I try to feed the baby rabbits I'm nursing with an empty belly, but this is just rediculous. Why does something so cute have to be so delicious? I haven't eaten rabbit in who-knows-how-long. Okay, I have to get a sandwhich now, my stomache won't stop growling. XD
