I've been infusing this for the last eight days, and it's finally here.

Recipe
Juice And Zest Of 6 Lemons
250g Caster Sugar
70cl Bottle Of Vodka
100ml Water
1. Pour 100ml of water into a small pan and add the sugar and lemon zest.
Slowly bring to a boil and stir until the sugar has dissolved. Reduce the heat and let it simmer for 15 minutes.
2. Add the lemon juice and simmer for another 5 minutes. Remove from the heat and allow the pan to cool.
3. Pour the vodka into a large, sterilised jar or bottle and add the lemon syrup. Secure the lid and shake well. You can use multiple, smaller jars/bottles if it's easier. Set aside and leave it in a cool, dry, dark place for a week. Give the container/s a shake each day to help it infuse so the Vodka doesn't stay separated during the process.
4. To finish, strain off the lemon zest and decant the limoncello into a fresh container/s.
