(sorry about the plate lol remembered to take a photo AFTER we all ate so I had limited bits to work work with lol)
To start off, Ill admit I'm not a huge chicken fan, having grown up on venison and basically any RED meat, Chicken is sort of a hard thing for me to cook to my liking lol. Also its the end of the month so that means that ingredients are running a bit scares around this house, so I thought it was time to pull out anything that looked good and see what I could do with it.
Heres what I used:
3 Skinless, boneless chicken breast's
Organic whole wheat pasta
Organic plain tomato sauce (you can use whatever)
Marjoram
Extra virgin olive oil
(again I'm sorry I never measure things but you don't really need to with this)
Here's what I did:
Boil some water for pasta, while its heating up I cut the chicken into smaller bits, nothing too specific really so however you like it. I then rubbed Marjoram seasoning all over them top and bottom, then let that sit for a bit.
Add the pasta too the water just like you would normally. Get a frying pan and cover the bottom with olive oil and let that heat up. once its hot carefully place the chicken into the pan. Let each side cook until the chicken is cooked threw.
Once everything is done cooking drain the pasta as you know, then i usually use tongs to grab the chicken out of the oil and set it on a paper towel just to absorb some of the extra oil. (dont forget your veggies!)
The chicken is actually better on top of the sauce, or dipped in it even, maybe even cut it up smaller and mix it right in? Whatever you like lol, I thought it was a pretty tasty dinner for not having many ingredients to work with :p
