Stuffed red peppers I have had them in many ways over the Years.. These are Excellent and are way better it you use Fresh Cod and Cracked pepper with pickled Capers and Black Caviar. Iv even had them with Goat cheese.. Being in Canada with its Diverse Ethnic background. You get to experience food from almost the whole world, Even SMOKIES even though eating it is Illegal and a Health Hazard.

WAY different from the stuffed peppers I'm used to. We're talking bell peppers (green, red, orange or sky-blue pink) and they're stuffed with a mixture of cooked ground beef|pork|turkey|chicken [select one or more], minced onion, minced garlic, cooked rice (white is okay, but I prefer brown) moisten with red tomato sauce and stuff into halved, pre-baked pepper shells. I got to try your recipe!

Yeah, my Dad would make a German Version with Ground Meat and Rice they would also be Green Bell Peppers.
I even had one that was made with Ground Bison and minced Red Onions..

I love to use bison in my chili. I make it with turkey and chorizo.

Bison my dad used to make Bison Chilly almost weekly. One of the hardest Meats to work with, it is so Full of Iron and so little fat, It's difficult to know when it's cooked!! Because it doesn't change colour.
So all dishes made with Bison are red. Never grey brown.
