I realized I never included a recipe for when I uploaded my Peach Crumble way back when. Which is kind of fortunate, because this Plum Crumble is vastly superior and I had a much easier time preparing Plums than Peaches.
Recipe - Makes 6-8 Portions
800g Plums
1 Teaspoon Ground Cinnamon
50g Soft Brown Sugar
200g Plain Flour
220g Soft Brown Sugar
110g Butter
1. Start by preparing the Plums. Halve each one, remove the stone, and cut into medium sized wedges (I generally get 8 wedges per Plum).
2. Transfer to a large bowl and toss the plums in the Cinnamon and 50g of Brown Sugar until coated.
3. Make the crumble/topping. Start by melting 110g of Butter in a saucepan over low heat.
Meanwhile, in a medium bowl, combine 220g of Brown Sugar and 200g Plain Flour (sifted).
4. Pour the melted Butter over the Sugar/Flour mix and stir until the mixture resembles coarse breadcrumbs. Not too big or small, I sometimes run my spoon/spatula through like a knife to break down any oversized pieces.
5. Pour the Plums into a large, broad baking dish. Sprinkle the topping over the Plums evenly, and bake at 180*C for 45-50 minutes.
The topping should be golden, and the Plums bubbling. Let it sit for five to ten minutes before serving.
