Scovillain was screaming for 3rd evolution and like a lot of people I can picture it having three heads and one being a yellow pepper. Since the green head it being classed as more 'vicious' due to the heat from the red head, I imagine the 3rd head is a mediator between the serious red and gleefully vicious green heads. The yellow head is more clam and cheerful and keeps their power in check and prevents them from rampaging...most of the time anyway.
