A great way of giving leftover chicken and veggies in the fridge new life along with your favourite oriental cooking sauces and spices!
Here’s how I made it:
1-boil water and measure 3/4cup rice then pour rice and hot water into helium-high hot pan and cover until water is boiled while stirring occasionally until water is evaporated and rice is cooked (careful not to burn)
2-after rice is cooked, crack 2 eggs and scramble in small bowl with fork or chopsticks then add to hot pan and mix until egg is fluffy and cooked (careful not to burn)
3-add choice veggies and leftover chicken to rice and mix together then add 1/2cup peanuts, 1/4cup peanut butter, 2tbsp hoisin and 1/4cup pad Thai sauce and mix until all ingredients are combined
4-plate and enjoy!
