Haha yeah its a pretty convenient solution xD The spines usually come out when his species feel tense and need to defend themselves, but they're not necessary when they're in a relaxed state.

Yeah basically his father put a seal on him that kept his shapeshifting permanent (so he would appear human and would be accepted in the Overworld), then it was unsealed many years later :'D
Although I think if Sky grew up as a demon from the beginning, he'd probably embrace his identity since he does have quite the ego. xD
