Kathy seems to have little or no alcohol tolerance and suggested they give the barrel to Fred's (potentially) wino dad for safekeeping since it's so valuable. Songween is afraid there wouldn't be any left if not kept in her hands. And based on how they're lining up expecting a taste, she's probably right.
Plus she wants it for herself if Kathy and Fred aren't going to drink it. Waste not, want not, and Songween doesn't want to waste it. Just to get wasted on it.

Good booze will ALWAYS draw a thirsty crowd. Of course, when it's THAT expensive and rare, them's fighting words and glasses (and blood!) will be drawn.
I understand the old bird's possessiveness over it though. I know quite a few old boozehounds that will do this sort of thing over the slightest aged barrel, and Fred's right, it's amusing AF to watch unfold if you've been privy to it in full swing before XD
