There are too many sad stories about people leaving everything they worked on only to find that they needed it later. Save a backup, take photographs, and/or print things out so you have a record. That will come in handy when building a portfolio or to show off something you have done.
Keep in mind that your current/previous employer may retain the copyright for what you made. This could open you up to legal liability, depending on what you use the material for. Just keep that in mind when deciding what of yours to keep/capture.
This is not to encourage you to steal company property (physical or intellectual). Be mindful of what is appropriate in your industry.
Anything that has been released publicly, or for public viewing, is a safe bet.
