There is/were a few different species of them, in various parts of the US. The Heath Hen, New England's version, became extinct in the 20th century. The midwestern and western ones were once in huge numbers, but the population started to decline with the advent of the railroads, and I think all of the surviving species are, as you say, protected. I've seen references to both beef tongue and "ox tongue," which is likely the same thing.
