Green turtle is/was probably the green sea turtle not terrapin or tortoise.

If what I read in one of Marjorie Kinan(sp) Rawlins' books is correct, the o'possum mentioned here has to be farm raised. According to her, wild o'possum has a terrible taste unless it's kept caged and fed decent food to give it the proper taste. Me? I ain't eatin' no 'possum.

That, I can well believe. I've heard many stories about the diet of animals affecting their flavour.

A prairie chicken is a large grouse, nearly extinct today.

And ""tongue" usually refers to beef tongue.

There is/were a few different species of them, in various parts of the US. The Heath Hen, New England's version, became extinct in the 20th century. The midwestern and western ones were once in huge numbers, but the population started to decline with the advent of the railroads, and I think all of the surviving species are, as you say, protected. I've seen references to both beef tongue and "ox tongue," which is likely the same thing.
