The thing about escrima is that it developed in the Philippines which has like a thousand islands and each of those islands developed their own school of thought regarding the art, so what you might see might be considered good escrima in one place and not proper escrima in another.
The general philosophy of the style is that, if you learn one weapon (which is tends to be the stick) when you can carry over what you learned into other weapons including your fists, which is mostly just beating the fuck out of the other guy's arms so they can't stop you from whacking them on the head or strangling them.
