I always think about efficiency when consulting with fursons. Thank you notes (e.g., emails, letters) are nice, but they take effort to write and sometimes it is unclear if the interviewer will receive your message. You have to gadget the time spent compared to the return on investment. Definitely do not write thank yous for everything. You got better things to do with your time.
Be warned that some interviews will be annoyed by thank you letters. Some may see it as an attempt to bias their rating of you and mark you down. You can never truly tell how they will be regarded...
