The (in)famous Italian condottieri would sometimes switch sides several times during the same battle, and would refuse to fight against the condottieri on the other side.

Why they kept getting hired is a mystery.

Well, I guess. Machiavelli wrote that a mercenary soldier is worth three men. It's one soldier on your side, it's one of your people who can keep doing their civilian job, and it's one mercenary that the enemy doesn't have on their side.
Though in the case of the condottieri, you've instead paid for a soldier that will fight for your enemy instead, right when you need them the most (i.e. when you are at a disadvantage) so I still don't get it.
There had to be other mercenaries one could hire after all... I think?

Well, I mean, "mercenary" literally means “hired for money”. Anyone doing work for pay is a mercenary, though the term only stuck around for mercenary soldiers.

I'm a sucker for armor designed for anthros. What is that flap by the ears? Do the ears stay out during combat or do they get tucked in somehow?

The idea is, you tuck the ears backwards under the "lobster tail" of the helmet and close the hear holes with the flap for extra protection if you're going into combat

In other situations, the ears can stay up for better situational awareness. Similar deal with the eye hole covers :V
