This slice tates great and is full of many good things. Different shaped baking pans can give you different effects too. I call it a slice but some would call it a loaf and there are so many different things you can add t suit your own tastes. This is from the kitchens of
yelleena
Ingredients
2 zucchinis - grated
2 carrots - grated
1 small sweet potato - grated
300g cheese - grated
300g bacon pieces (keep 50g back for the topping)
150g dukkah (this is a mix of ground nuts and spices)
1 tbsp oil
1tbsp sugar
1 tbsp mixed salt and pepper
1 tsp garlic salt
1 tsp mixed herbs
12 eggs
1 ½ cups buckwheat flour (plain or other flour types work well)
2 tsp baking powder
Method
Pre-heat oven to 150º C
Take a large baking dish and line with baking paper (or rub with butter and sprinkle with flour)
Grate all your vegetables first and put into a large bowl.
Add 250g of the bacon, cheese, dukkah, oil, sugar, salt & pepper, herbs and mix together with a wooden spoon.
Now crack in the eggs and mix some more
Lastly add the flour and baking powder making sure to mix the flour in well scrape the side of the bowl down as needed.
The mix should be moist, hold together but easily slide around the bowl (add another egg if it seems too dry)
Carefully pour the mix into the prepared baking dish
Use the remaining 50g of bacon sprinkle this evenly over the top, more grated cheese can be sprinkled as well if desired.
Bake for 2 hours or until the centre is cooked (insert a knife or skewer in the middle and if comes out clean and the top is brown then the slice is done). The idea is to bake this slowly.
