I know, another raw recipe..
Ingredients:
1/2 cup to 1 cup of raw almond butter (you can use other nut butters)
1/4 cup raw honey
1/4 raw cacao nibs
raw, unsweetened coconut flakes
Directions:
1. Line a cookie sheet with wax paper
2. Put coconut flakes in a shallow bowl or on a paper plate.
3. Let nut butter soften to room temperature.
4. In a medium bowl mix together nut butter, honey, and cacao nibs.
5. Roll into 1 to 1 1/2 inch balls and roll them in the coconut flakes.
6. Place on prepared cookie sheet and chill in the refrigerator for at least an hour.
Hints:
- You can alter the recipe to not be raw, its up to you.
- For extra sweetness/texture, add some cacao nibs to the bowl with the coconut flakes to roll in.
- For storage: Air tight container (Jar/plastic container) with wax sheet between layers (or it will form one giant mass)
