This is alponian chowder, a dish inspired by Treasure Planet and molè recipes. It's made of cocoa, onion, garlic, peanuts, chili peppers, chipotle, oregano, cilantro, cinnamon, cumin, rice, and tofu. This is half-finished, before the molè would be mixed with the rice to give you a better picture of the base. If I took a picture after the rice was mixed, everything would just be brown.

2 tablespoon vegetable oil
1 chopped yellow onion
2 cloves minced garlic
2 cups vegetable broth
2 tablespoons cocoa powder
1.5 tablespoons all-purpose flour
1 tablespoon peanut butter
2 teaspoons chili powder
1 teaspoon oregano
1 teaspoon chipotle powder (The molè gets spicier because of the amount of chipotle you put into it and also gets spicier over time)
.5 teaspoon ground cumin
.75 teaspoon salt
14 oz extra firm tofu
1 cup medium-grain rice
2 cups water
3 tablespoons chopped cilantro
Sesame seeds (optional)
1. Cut the package of tofu into 1-inch cubes. Place a cloth underneath and over the tofu cubes. Then place something like a cutting board over both towels and weigh it down with a few pounds of weight. Leave it for an hour or two. This is to dry out the cubes to fry later on.
2. In a pot add the rice, a quarter teaspoon of salt, and water. Boil until the water skims the top of the rice. Reduce to low and cover for about 20 minutes or follow the instructions on the bag. Afterwards, put the cilantro in the rice and set aside for later.
3. Heat 1 tablespoon of oil in a saucepan. When hot, sauté the onions until the onions turn translucent. Then sauté the garlic. Cook until the onions are brown. Add the broth.
4. Add to the onion mix the cocoa powder, flour, peanut butter, chili powder, oregano, chipotle powder, cumin, and the rest of the salt. Bring it to a simmer and cook for 5 minutes or until it thickens.
5. Let the molè cool and add it to a blender. Blend the mix until it becomes smooth. Divide it into halves for later.
6. Add the other half of the oil to a seperate pan and put of high heat. Put the chunks of tofu into the pan and lightly fry them on each side. Afterwards, add half the molè to the tofu and mix well.
7. Add the other half of the molè to the rice and mix well.
8. Make sure everything is hot still. On a plate, place the rice first and then add the tofu. Drizzle any leftover molè on the top. Add sesame seeds if you want. Enjoy!
