They're pretty flexible, I can pretty much fold my dogs ears any way that I want and it doesn't seem to hurt him.

Most my dogs have had floppy flat ears that you could do anything with. But the one dog who’s ears stood out, she didn’t like it if you played with them. Granted that could have been just her.

There is actually an interesting effect where the domestication and pacification of a species always tends to lead to less cartilage development, which means floppy ears in domesticated species. So many dog breeds have floppy ears as a result of domestication, while wild animals like wolves would not.
