Although the Stellar Typhoon isn't really that big a ship, its crew still has many different facilities available to them. In fact, it always seems to have the right amenities at the right time, and it often feels like stuff appears and disappears at random. The main reason for this is that I have a habit of randomly introducing some facilities while simultaneously forgetting about others.
This, on the other hand, was the funniest in-universe explanation I could think of. Presumably this was how Izzy and Taiho got that gymnasium they were working out in the last time they appeared.
