6 tablespoons unsalted butter
1/2 cup packed brown sugar
2 tablespoons corn syrup
3/4 cup oats
3/4 cup all-purpose flour
1/2 cup grated coconut
1 teaspoon baking soda
1. Preheat oven to 325F. Grease a baking sheet. Place the butter, sugar, and syrup in a saucepan. Heat until butter is melted and sugar is dissolved.
2. In a separate bowl, combine the oats, flour, and coconut, then pour the butter mix into the bowl and stir the two together.
3. In a second bowl, combine the baking soda with 1 teaspoon of hot water and stir the mix into the oat mix.
4. Scoop up a tablespoon of the dough at a time, forming it into a ball and placing it on a baking sheet. Space the cookies several inches apart. Bake until brown, or 15 minutes.

From Chris: I'm pretty sure they became flat because, while you put in baking soda as a leavening agent, it needs a bit of salt to 'activate' it. (On my end, I prefer a mix of baking soda and baking powder, but that is a risk as well with some baked goods as they can get "cakey".)
