Odd that of all peoples the birds would be the only ones to value an enclosed cockpit

Even though birds are most suited to breathing air at high altitude and dealing with the cold air hitting our faces

Then again it's fantasy so anything goes

My explanation for this is that, their ships were designed during wartime and meant for speed and evasion as well as valuing the lives of their pilots. Standing on deck aboard a speedy vessel would be a lot more dangerous. The fel and canun build the ships cheaply and cut costs as much as possible to have a larger army. These ones particularly are civilian cargo ships and can store material inside aswell as on deck. But mainly it’s a stylistic choice. Oxygen also isn’t really an issue since space is breathable as well as the birds being flightless.

That makes a lot of sense, and is pretty well represented in the build. The small amount of curved surfaces, the exposed machinery on the cheap vessels speaks to a reduced complexity in manufacture and maintenance, at the cost of aerodynamics and robustness. That is good verisimilitude.
