Citrus and chicken have gone hand in hand thoughout history and this is no exception. This beautifully roasted bird shines with a tasty tweek of orange and rosemary served with succulant vegetables form the kitchens of

A roasted chicken with oranges.
One six pound chicken, skin loosened.
Potatoes and Carrots to make a base in the bottom of roasting pan;
Cut up oranges and stuff the inside of the bird, and under the skin. Dust the whole thing with rosemary spices.
Roast for two hours at 350º F, (I cheated and peeked in on mine, so I added five minutes for each peek) (Low and Slow baby!)
Eat. This has the added benefit of no added butter or salt! It's healthy and light and tasty!
EDIT: The potatoes did need a touch of salt (at least for me) and the carcass and the leftovers will go in to making a yummy soup! I don't like to waste, and all that flavor will be going into a stock pot and bubbling away to make something more.
