This is also from that cooking blog I mentioned in my French toast muffins, because this is the recipe I promised :)
Ingredients-
*optional stuffs
1 cup of your favorite pasta sauce
1 lb of hamburger meat (used a mix of turkey burger and regular*)
1 shallot, chopped*
1/2 onion, chopped*
1/2 package of mushrooms, chopped well*
3 cloves garlic, chopped*
handful of fresh basil, chopped*
leftover pancetta*
18 wonton wrappers (by the time I was done, there was 2 wrappers left)
8 ounces parmesan cheese, grated
3 ounces mozzarella cheese, grated
[Seriously folks- all I did was grab a bag of 6-cheese Italian blend, already grated...why strain yourself if you dont have to XD)
4 ounces ricotta cheese (used part-skim, it cuts down on the fat- and if you want to use fat free, go for it)
To make:
1.) Preheat oven to 375 degrees and spray muffin tin with Pam (and, you guessed it, used those throwaway pans again)
2.) Saute' the onions, garlic, shallot, pancetta and basil, season with salt and pepper, and cook with a bit of olive oil. Once those are all nice and cooked, put them in a separate bowl and with the pan still good and hot, thats when you throw on the meat, season to taste, and drain. If the meat is still kinda moist- throw in the herb mix from that bowl and then fold it all together.
3.) Reserve 8 tablespoons of Parmesan and mozzarella- this will be the topping. But in the meantime, the remaining ricotta and cheese that you have on hand will be the layers in between!
SO- Just do this-
First the wonton sheet...a spoonful of the meat/herb...a spoonful of sauce...then a spoonful of ricotta and cheese, then repeat with the second layer- until all the muffin tins are full (with the meat filling I had, it was enough for FOUR tins worth)
5.) Then throw the tins in the oven and let bake for about 20 minutes, or until nicely browned (I would say, an extra 10, depending on your oven- just keep an eye on it from time to time)
6.) Let cool for about 5 minutes, then pop them out with a butter knife, serve asap with extra sauce or cheese, and thats it!
