Well, I said I would be doing something highly fattening and sugar loaded....don't say I didn't warn you folks! :P
This I would call one of those "front cover recipes"...you know, when you see a picture in the magazine/newspaper, and it also has a recipe card in the pic?
Yeah...one of those...so- anyways... :P
Also called "Aunt Claire's Famous Chocolate Chip Cookies", submitted by the Ashworth family...found in the Providence Journal, January 19th.
* = optional (since its a nut cookie...um...well, if you're allergic to nuts, just skip them :P)
Ingredients:
1 cup macadamias*
1 cup pecans*
1 cup walnuts*
4 1/2 cups flour
2 teaspoons baking soda
2 teaspoons salt
2 cups Crisco....yeah, I went there :P
1 1/2 cups sugar
1 1/2 cups brown sugar
4 eggs
2 teaspoons vanilla
1 bag chocolate chips
2 cups warm water, reserved* (the recipe didn't call for it, but I'll come to that in a moment)
To make:
1.) First, grab a good sized Ziploc bag- freezer version preferably- and pour in the cup of macadamias, pecans and walnuts...then just zip it up and crush them with a heavy mallet. You dont have to do a paste, just a good crush.
2.) Get two large separate bowls...one for the dry (flour, salt, baking soda) and one for the wet (eggs, vanilla, crisco, sugars etc.) Blend separately- especially the wet, where it gets to a nice fluffy consistency. Then you can just fold in the wet stuff to the mixed flour, along with the nuts and chocolate chips :3
3.) ....And here is where I have to say...that *&^% mix was SO dry.....
....HOW DRY WAS IT?
...Think I could have used it for kitty litter...sheesh! Even with all of the folding, stirring and etc, it just would NOT cooperate, so therefore I will say: put in one cup of water and stir well...and if its still too dry, thats where the second cup comes in :3
4.) Get a large cookie sheet and you can either use the cooking spray, or a sheet of parchment paper, both work fine...then preheat the oven to 375 degrees- and then, drop one tablespoon of cookie batter onto the pan until you get a good row of cookies going....
5.) Cook for 10 to 12 minutes- I would say more like 20 to 25, or at least until when they get good and brown :3
Enjoy! :)
P.S- this makes a whole ton of cookies, and more than likely, you'll still have half a bowl left to freeze for next time XD
