Over the weekend I took back as many soon-to-expire Jalapenos as I could from work.
Decided to try pickling them (and also make some soup).
Turned out pretty well, I just wish I had enough to fill either one jar or both, but I had this awkward in-between amount.

The Pickled Jalapenos turned out fantastic! Better than the ones I buy straight up.
A lil' sweet and vinegary, softened but still with a bit of crunch. The ones I buy are usually soft all the way through, which isn't amazing.
The soup was good, too. Pretty sweet, but needed some extra seasoning. Made with Swede, Carrot, Squash and Sweet Potato, I should've mentioned that before. More of an Autumn soup, really.
