I've had to start going out every night to put the chickens in the coop by hand with the temps so low

Oh no! Roosters can be so sweet. My family had a rooster we named Lil' Swag because he had floofy pants (also because we were little kids and swag was the fun, new word at the time) and he was such a cuddler.
My parents still have chickens and they make sure to have a rooster to watch out for predators. They live in an area with a decent amount of coyotes and raccoons. Roosters can be amazing protectors but will risk there own health to do so. Glad to hear your brave little friend is doing fine now.
