This is a simple roast with mushrooms and garlic that I did on my Weber bbq.
Ingredients:
Roast beef
mushrooms
garlic
oil
can of beer
Himalayan Salt & freshly ground black pepper
bbq sauce
Honey garlic & serrano pepper & lime
Method:
Pre heat your bbq to 250 degrees then add your roast using the indirect cooking method *the heat is on one side of the bbq and your meat is on the other side.* drizzle both kinds of bbq sauce over the roast and let it cook. I like to rotate the meat and drizzle the bbq sauce over the meat ever so often (more accurately every 2 beers) once the roast is almost done get out a cast-iron pan and add some oil and add the roast and the mushrooms and garlic around the roast and set back on the bbq. Once the mushrooms are about half way done add a can of beer and let it cook until the garlic is nice and soft and the mushrooms are done. once every this is ready add salt and pepper to your liking.
From Chris: It is worth noting a few things - the bigger the roast, the more time it will take to cook. However, you do want to season it liberally on all sides to get the best flavor.
It was (and is) a brilliant move to do this as indirect cooking on the bbq - because if it was direct, the meat would end up overcooked and tough.
Mind you - minus the bbq sauce, Undertaker could have also pureed the mushrooms and roasted garlic with the cooked beer and make a very good sauce all on its own. (with a few extra herbs added in like rosemary or thyme, plus some salt and pepper, you'd have a serious sauce there as well.)
~ Almost forgot: Always let your meat -rest- (preferably covered with a tent of foil, to prevent too much heat from escaping)
for at least 2-3 minutes after cooking, that way you don't lose all those great juices :)
