One way to consider it, is like blood. There's a minimum and a maximum. They could lose mass with damage or travelling or maybe gain some mass with some extra water, food, magic. But it always will go back to the set amount, their age decrees.

So... We just have to constantly supply them with food or water and such to make sure they're as bulky as they can get! That or, figure out time travel and manage to age them faster- for the bigger dorbs?

They can mix around and you can take a picture really quick, but Dorbleys don't mix for long and they repel one another like oil and water. Survival evolution thing. I like to picture if they ooze together to make a bigger one, it's just the goo equivalent of two kids in a trench coat. Not practical.
