It's snowing here in Denver so I decided that the house would benefit from some good, hearty food. So, I give you the high altitude beer-cornmeal crust Chicago style deep dish pizza. Both hearty and heart-stoppy.

Recipe!
The crust is super simple:
1 pkg rapid rise yeast
1 cup of beer (at 105 degrees F)
1/5 cup vegetable oil
2 tsp olive oil
1/4 cup cornmeal
2 1/4 cups flour
Yeast and beer go in a bowl, let 'em sit for a minute.
Add your veggie and olive oils, cornmeal, and 1 1/4 cups flour.
Mix (by hand, no cheating here) for a couple of minutes until it's chunk-free.
Add the rest of the flour and knead it until everything's consistently moist and smooth.
Let it rise for ten to fifteen minutes.
Knead again then allow to rise again for ten to fifteen minutes.
Oil your pan well (I melt a 1/4" slice of butter in two oz of olive oil and use that for oiling my pan.)
The sauce:
8 oz tomato sauce
6 oz tomato paste
1 tsp oregano
1 tsp basil
1 tsp garlic (powdered)
.5 tsp onion (also powdered)
1 tsp paprika
3/4 tsp agave nectar (use sugar if you can't find it)
1/4 tsp salt (sea salt plz)
Couple pinches black pepper
1 tbsp olive oil
1/2 tsp white vinegar
Just mix all this together, don't worry about adding heat, it'll do that while the pizza bakes.
I use a 9"x1.75" deep dish pan. Lay out the dough in the (well oiled) pan and pinch it over the rim of the pan. Layer in your cheeses, I prefer mozzarella, provolone, mild cheddar and jack, on the dough. Add in your sauce on top of the cheese and be liberal, sauce is your friend here. Add on your other desired toppings on the sauce (none in my case) then sprinkle with a layer of shredded mozzarella and parmesan.
Toss that bad boy in a 350-375 degree oven for forty minutes or so and voila: epic deep dish.
