Because the skunk didn't make the top 12 or 13 in god's race to be in the zodiac calendar.
Rat came in first by cheating by hitching a ride on the Ox's back who came in second. On top of that (depending on which version of the story) the Rat didn't wake up the Cat in time for the race and lost by being a "no show" even though the Rat promised to wake the Cat up, but didn't.
And the Pig came in dead last. Maybe Kelsey can take that spot my being extra chunky in the year 2031.
