Think resolution of the VR headsets need to make one or two more steps up before that really becomes viable, since otherwise you cannot see as much information as on a 4K screen (since on the VR headset, the virtual screen would only take a portion of the view field).
However yeah I could imagine that for the not far off future!
Have seen that kind of keyboard as well. Think even with perfect tech, it would still greatly miss the haptic feedback. There was a cover for the Surface Pro which was a touch-sensitive keyboard, but that didn't become too popular and they offered only the tactile variant after a two generations or so.
At very least you need such vibration feedback like the iPhone start button has.
