Another thing I've been dabbling with over the months for Adrian's and Keiko's setting; each and every religion held some nuggets of truth, as every pantheon that existed through the course of the world's history now resides in the afterlife. Gods from different pantheons often meet and interact with each other, with both good and bad outcomes. Due to the connection between Keiko and Thor, the Norse pantheon plays a big role in the main story.
Odin, the Allfather: Leader of the Aesir, after the events of Ragnarok he now watches over his people in New Asgard, in the realm of the afterlife. While a revered and beloved god, he was once obssessed with knowledge to an unhealthy degree and did what he could to prevent Ragnarok, only for his actions to eventually lead to it. Tempered by his experience, he is now a much more patient, kindly person, willing to impart his wisdom unto anyone willing to listen to him. Considers Adrian something of a kindred spirit and takes interest in the young mortal, occasionally providing him with reading material or helpful items. He's often accompanied by his eyes and ears into the mortal realm, Huggin and Munnin. While most other Aesir have had their injuries and disabilities healed upon passing into the afterlife, Odin has kept only one eye, as a constant reminder of the price he once had to pay for the knowledge he amassed.
Thor, the God of Lightning: Greatest hero of the Aesir and protector of mortals. While always eager to get drunk or jump into battle, this towering and unstoppable warrior is also an incredibly jovial, fun-loving and easygoing fellow. Many say that the only thing greater than his sheer might is his sense of compassion and understanding, which is why he is widely respected and loved even among gods from other pantheons. He and Keiko have become something akin to siblings and he has welcomed her into his home as his sister, with the two engaging in drinking and sparring sessions whenever they meet up. That said, Keiko is no homewrecker as Thor is happily married to Sif and is a proud, loving father towards Magni, Modi and Thrud. He has also done what many have deemed impossible; earning genuine friendship of none other than his fellow Aesir god Týr, who is notorious for his cantankerous, anti-social personality.
Týr, the God of War: If there's one Aesir god who could match Thor's strength, it is Týr. Do not be fooled by his diminutive size compared to most other gods; he is still a wall of pure muscle within which beats a fierce heart of a deadly warrior. Whereas Keiko fights with style and elegance and Thor charges into battle with glee and laughter, Týr is a borderline berserker who rips and shreds through opponents several times his size (and in great numbers) with sheer brutality and unrelenting ferocity, all the while snarling and screaming like a beast. Despite this seemingly feral combat style, he is still accutely aware of his surroundings and is firmly focused on who his targets are, so that he avoids any unintentional collateral damage or hurting any innocents that get caught up in the frenzy of battle. Outside of combat he is very reserved, grumpy and anti-social, preferring to keep to himself. However, those who earn his friendship can attest to his undying loyalty, nobility and honor. While he can be somewhat blunt and brutally honest, he is a very compassionate and caring person underneath, eager to jump in and help those in need even without being asked to.
Much like Odin, Tyr has refused to heal his injury from the time Fenrir bit off his right hand, instead replacing it with a magic construct. It serves him as a constant reminder to never lose focus. Gray fur on his outfit is pieces of Fenrir's skin he tore off in retaliation for the aforementioned incident. Fair trade, if you ask him.

And I agree with Lordstevie, Freya should be a cat and Loki should be a fox (since the spots for both the wolf and the snake are already taken by Fenrir and Jormungandr respectively).
