1. Usually for adopts and my arts, its takes me something around 2-3 hours to draw+paint, im trying to post at least 1 adopt once a day or once two days.
2. For that, You click on that icon with three lines (next to your avatar on the top bar), and then on "Check my notes", then just add the Recipient and Subject to the Notes panel.
