Hmm... having the eyes at close angles like that could increase the area of binocular vision, or allow the raptor to pinpoint two separate prey animals at once.
Another possibility is that if the third eye saw in infrared, the animal could see right through the camoflage of mammals and other dinosaurs. Actually, I should totally design a creature with an IR sensitive third eye.

The Tyghateek (aliens I created, I tend to draw them) have odd vision, it's mostly Near-Infrared (Not heat vision per say) due to the nature of their star (Red Dwarf), but they get a splash of visible in there as well.
If anything it would make active camo absolutely useless, as computer screens would just be blue and blank. :p
