The versatility to choose between focused and AoE water elemental attacks is great. I wonder about the water it produces tho': It's fitting to be salt water, so not for drinking if it ever gets off the sword even. A slated wound hurts and bleeds even more, and may be a good ward against certain creatures even!
However, if it can produce fresh water for drinking purposes, it negates the need to carry a water bottle.
